Mini Cheddar Meat Loaves

Yeah, yeah - I know what you are thinking! Meat loaf - GAG! I am not the biggest fan of the old fashioned meat loaf that grandma made - but these little babies - well, they are delish! My kids devour them and to be honest, so do Mike and I. The recipe uses all simple ingredients that most people have on-hand and it goes perfectly with some mashed potatoes and corn. A crescent roll on the side isn't too shabby either.

Mini Cheddar Meat Loaves

1 Egg
3/4 Cup Milk
1 Cup Finely Shredded Cheddar Cheese
1/2 Cup Quick-Cooking Oats
1/2 Cup Finely Chopped Onion
1 tsp. Salt
1/4 tsp. Pepper
1 lb. Lean Ground Beef
2/3 Cup Ketchup
1/2 Cup Packed Brown Sugar
1 1/2 tsp. Yellow Mustard

In a bowl, beat the egg and milk. Stir in cheese, oats, onion, salt and pepper. Add beef and mix well. Shaped into 8 small loaves and place in greased 9x13 pan. In another bowl, combine ketchup, brown sugar and mustard and spoon over loaves. Bake, uncovered at 350 for 45 minutes or until meat is no longer pink.
